Ingredients
- 1 can (8 or 9 ounces) pineapple chunks or tidbits, drained, juice reserved
- 1 1/2 envelopes unflavored gelatin
- 1/4 cup cold water
- 1/4 cup lemon juice
- 2 tablespoons sugar
- 1/8 teaspoon salt
- 1 cup ginger ale
- 1/2 cup seedless grapes
- 1/2 cup chopped apple
- 2 tablespoons finely chopped crystallized ginger
- Prep Time: 20 minutes
- Cook Time: 2 minutes
- Total Time: 22 minutes
- Yield: 4 to 6 Servings
Preparation
Measure 1/2 cup of the reserved pineapple juice. Add water if needed to make 1/2 cup. Put the pineapple juice in a saucepan and bring to a simmer. Remove from heat.
Soften gelatin in cold water, then dissolve in the hot pineapple juice; add lemon juice, sugar, salt, and ginger ale. Stir to blend.
Chill thoroughly until mixture is partially set. Fold in the grapes, the canned reserved pineapple chunks, apple, and ginger.
Pour into a 1 1/2 quart mold. Unmold on a bed of greens and serve with whipped cream or salad dressing.
