    Basic Rule

    • You can keep hard-boiled eggs at room temperature for up to two hours. After that, you should refrigerate or dispose of the eggs. If the temperature is on the warmer side, dispose of eggs after one hour.

    Special Considerations

    • While it's important for all consumers to handle raw and cooked eggs carefully, at-risk consumers should follow egg handling guidelines especially closely. These at-risk consumers include the elderly, the ill, young children and infants, those undergoing chemotherapy and anyone else who has a lowered immunity to disease.

    Prevention/Solution

    • If the consumer doesn't cook the eggs properly, safe storage at room temperature becomes impossible. To properly prepare the eggs for room-temperature storage, cook all eggs until both the yolk and the white portion are firm, without any trace of runniness.
