How to Substitute Agar Flakes With Corn Starch
- 1). Calculate the amount of cornstarch required. You will need approximately 2 tablespoons of cornstarch to replace 1 tablespoon of agar flakes.
- 2). Adjust the methodology. Agar needs to be boiled for several minutes, then added to the recipe and allowed to set. Cornstarch will thicken at just below the boil and will begin to break down again once the boiling point is reached.
- 3). Prepare the recipe, heating your ingredients to a high simmer. Whisk the cornstarch into cold water or other liquid, and slowly stir it into the hot ingredients. It should thicken almost immediately, if the recipe is hot enough.
- 4). Add more cornstarch slurry if necessary to create the desired consistency. Bear in mind that it will thicken somewhat as it cools, so it may not be necessary.
- 5). Serve the modified recipe immediately, or chill for later service, as appropriate.
