    Breaded Tenderloin Cutlets

    • Add 1 egg and 3 tbsp. of milk to a medium bowl and whisk to together. Put ½ cup of self-rising flour, 1 tsp. of black pepper and 1 tsp. of salt on a plate. Use a spoon or your fingers and carefully mix the flour and seasoning together. Add ¾ cup of unseasoned breadcrumbs and 1 tsp. of paprika to a medium bowl. Dredge your tenderloin cutlets through the seasoned flour then dip into the egg. Next, coat each cutlet with the breadcrumbs. Melt ¾ cup of butter in a skillet and cook the breaded cutlets on medium heat for four minutes on each side. Both sides should be a light golden brown. Remove and serve.

    Cutlet Casserole

    • A casserole is a simple way to make a delicious meal. Preheat your oven to 400 degrees and coat a large baking pan with cooking spray. Lay 1 lb. of tenderloin cutlets in the pan in a layer. Slice a large bell pepper and onion into small pieces and place on top of the cutlets. Take 2¼ cups of instant rice and sprinkle over the tops of the cutlets. Open 2 cans of stewed tomatoes and drain the juice into a bowl for later use. Cover the rice with an even layer of stewed tomatoes. Add 6 oz. of pineapple juice, ½ cup of water, and a ½ tsp. each of garlic powder and salt to the tomato juice. Stir the liquids together and pour into the pan, making sure to cover all of the rice and cutlets. Cover with aluminum foil and bake in the oven for 50 minutes. Remove from the oven and cool before serving.

    Tenderloin Cutlets & Gravy

    • Cut 1 large onion into thin slices and cook in a skillet on medium heat with 3 tbsp. of melted butter until softened. Remove the skillet from heat until needed again. Pour 1 cup of flour in a bowl, along with 1 tbsp. each of salt, black pepper and garlic powder. Mix together with your fingers and then coat 1 lb. of pork tenderloin cutlets on both sides with the seasoned flour. Add 3 tbsp. of vegetable oil to the pan of cooked onion and heat on medium high. Put the cutlets in the hot pan and cook for 3 minutes on each side. Combine 1 cup of water and a package of dry beef gravy mix in a bowl and stir. Pour the gravy mix over the cutlets and simmer until the gravy is as thick as you want it.
