Chicken Salad Goes Mediterranean
The Mediterranean has such a wide variety of fresh fruits and vegetables. The traditional Spanish diet utilizes many of them, including olives, roasted peppers and fresh cheese. We decided to take some of these classic ingredients and prepare a simple salad as a main course. Boneless, skinless chicken breasts can be grilled ahead of time, or while prep is performed on the salad. Then, it's simply a matter of arranging roasted red pepper strips, sauteeing sliced onions and sprinkling feta cheese, sliced olives and tomatoes on top. Dress just before serving.
