Introducing: The Ghost Pepper Chilli
The Ghost Pepper is internationally recognised as one of the top 5 hottest chillies in the world. Since its mention in the Guinness World's Records in 2007 the ghost pepper has taken many names but most people know it as the Bhut Jolokia. Ghost pepper plants are quite fickle, often varying in size, amount of fruit production and overall development but if the gods are with you then it can be one of the most fantastic chillies ever to tantalise your tastebuds.
The heat is of course really off the SHU scale but the flavour is also amazing, with notes of citrus in the background. Dartmoor Chilli Farm offer packs of Whole Dried Bhut Jolokia Chillies that are definitely to be handled with caution! Of a beautiful redish colour, only a tiny bit of these ghost peppers will fire up salsas and fajitas but they are also wonderful rehydrated in warm water and let to simmer in a nice carrot & coriander soup. Through trial and error, we came to the conclusion that the ghost pepper works better in root vegetable based dishes rather than lighter vegetables such as bell peppers or tomatoes.
But if you want to avoid having to touch ghost pepper with your bare hands then you can always use a good quality hot sauce using the bhut jolokia as a main ingredient such as Dave's Ghost Pepper Sauce. Definitely one of the hottest sauce from Dave's, there is no chilli extract to be found (amazingly) which in itself is quite a feat.
One of our favourite hot sauces using bhut jolokia is Cambridge Chilli Farm's Ghost Pepper 10. As its name indicates, Cambridge Chilli Farm uses 10 ghost peppers per bottle blended in with roasted tomatoes and garlic, adding a depth that will leave you wanting. We absolutely love it mixed in meaty stews or even smothered on barbecued chicken if you dare!
On the States side, Mad Dog has also come up with a fantastic, albeit different, ghost pepper hot sauce which is part of the notorious 357 collection. A couple of drops alone with really set your food on fire (and don't we love it for it!). There is a kind of smoky and sweet flavour in the background that is truly delectable so if you can bare the heat we definitely advise you to go for it!
If you really want to go all out though just get your hands on Dave's Ghost Pepper Limited Edition Private Reserve . Every year for the last 17 years Dave makes a batch of Limited Edition Hot Sauce for chilli heads and collectors amongst us and in 2010 he chose the bhut jolokia as the main component for his batch of fiery sauce. The wooden coffin adorned with a caution tape that the sauce nestles in makes it a great gift to give out to friends... or keep for yourself as these are bound to go up in value in the coming years!
