Kinds of Morel Mushroom
- The yellow morel is generally the most desired because of its superior size and taste; they can grow to be a foot tall. The head of the mushroom's color ranges from white to yellow making it easy for foragers to spot. Some other common names of the yellow morel are white morel, sponge morel and giant morels.
- Black morel sprout the earliest in the morel mushroom growing season and also grow fairly large. The ridges of the brain-like head are tinged in black as if they were slightly burned. The black morel causes more allergic reactions to people than other varieties and should be eaten in limited amounts for first time consumers.
- The half free morel begins sprouting between the times of the black and yellow morels, and they are generally smaller than the other varieties. They are named half free morels because the bottom half of the mushroom's cap is hanging free as opposed to being connected as in other varieties. The half free morel is generally brown with a blackish tinge.
- Deliciosa morels are smaller to medium size morels that have more of an elongated, pointed cap than the rounded cap of other varieties. This variety is less common and is limited to North America's hardwood forests.
- This morel has been found in conifer burn sites and other sites in western North America. It is commonly referred to as the gray morel, due to its sooty color. It has a unique appearance because it is covered in tiny, dark hairs, but these diminish with age.
