Ingredients
  • 2 (1-1/2 pound) boneless pork loin roasts
  • 16 ounce package baby carrots
  • 1 onion, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (20 ounce) jar chunky salsa

  • Prep Time: 5 minutes
  • Cook Time: 480 minutes


  • Total Time: 485 minutes
  • Yield: Serves 6


Preparation
Place carrots, onions, and black beans in bottom of 4-6 quart crockpot. Top with pork loin roasts, then pour salsa over all. Cover and cook on low for 7-9 hours until pork is thoroughly cooked (150 degrees F) and very tender.
